After School Energy Balls

These are a great no bake after school snack that you can easily whip up for the kiddos and have on hand as a healthy protein snack. They are delicious, bite sized and loaded with nutrients.

1 cup old fashioned rolled oats

1/3 cup maple syrup

1/2 cup shredded coconut

1/2 cup peanut butter

1/2 cup ground flaxseed

1/2 cup chocolate chips

1 teaspoon vanilla extract

Add all of the ingredients to a mixing bowl and stir together.

Scoop the dough with a cookie scoop and roll them into balls. If it feels too sticky you can place it in the fridge for 30 minutes.
